Autumn Inspired Minestrone

As the weather is starting to get cooler, its the perfect time for soups. In search for something different than the norm and fall inspired, I came across this soup. I was out of a couple ingredients and had to swap a few things. But let me tell you, this soup was delicious, made a ton, and got better with each bowl of leftover.

The recipe called for swiss chard, and I replaced it with kale cause that's what I had. It was a little heartier, but held up really well. The other swap was I didn't have any regular pasta (only chick pea and rice noodles), The rice noodles worked out great, and didn't get mushy as time went by.

Do yourself a favor and give this soup a try, it will be your new go to!
